Florence Fennel (Foeniculum vulgare var. azoricum) is a classic vegetable fennel grown for its tender, swollen leaf bases that form a crisp, bulb-like structure. It has a fresh, mildly sweet anise flavor and is delicious raw, roasted, grilled, braised, or added to salads, soups, and other dishes.
The feathery foliage is also aromatic and can be used as a herb or garnish. Florence Fennel is a cool-season crop that performs best when grown during the milder months, making it well suited to the UAE winter growing season.

- Keep the soil consistently moist to encourage tender, well-developed bulbs.
- Add compost before planting to improve soil fertility and moisture retention.
- Avoid prolonged dry periods, which can encourage premature flowering.
- As the bulb develops, gently mound soil around its base to help keep it tender and pale.
- Harvest when the bulbs are firm and well developed, before they become too large or the plant bolts.
